Good for the Whole Family

Ahh, the power of a good example. Since Nate & I have started working out, it has become a family favorite activity to work out with us. The kids have really gotten into exercising with us, Adi has even written her own exercise program, which she follows strictly. The boys especially enjoy running the stairs. As you can see, this program has worked wonders for Gage's muscularness.

Eating Healthy Doesn't Have To Taste Bad!!

Hi all. Here is my breakfast recommendation for this week. This is a yummy ham & asparagus omelet with the family favorite green smoothie. Just take 4 egg whites, omeletize them, saute some onions, asparagus, garlic and lean ham together. Place in omelet, sprinkle a small amount of feta for flavor and fold omelet over. I also throw in a handful of spinach and dice up tomatoes for the top. Delicious!! and filling. Sometimes we have for dinner too.

Smoothies are good any part of the day!

I've been trying to follow the plan perfectly. So I was a little disappointed when i realized I missed one of my veggie servings Friday. This smoothie is a good way to get a serving in.

Get FIT and Start Hob Knobbin' with the Rich and the Famous

Now then, I knew you guys would make all sorts of connections with your hot new bods and bodaciously buff muscles... but not even I could have foreseen this!:

This also explains why Mike and Ali didn't submit their points yet again! Man, I'll tell ya, either they have a case of the Amnesias every Sunday, or they are planning a huge comeback in this challenge. Which is it? Stay tuned!

Anyways, another week has gone by and needless to say, dis family gittin' FIT y'all! To date, we have lost just under 58 pounds of body fat!
You don't even want to know how many premature newborns that equals! Great work! And I'm sure if we were to measure waists and body fat % (which I think we should do at the birthday parties for March, yes mine is on the 13th and yes I am in need of gifts and trinkets).

So yeah 58 pounds of body fat,Great work everyone! There is a ton of progress being made by everyone and we are well on our way to creating healthier lifestyle HABITS.

That's right Habits.They say that it takes 30 days to create a successful habit and only 2 days to break them. Well, we are coming right up on the 30 day mark and to honor such a milestone, I thought I would acknowledge some of the good habits that have been formed by the FIT Challenge Contestants

Coach: Has consistently walked mile after mile in the Not so happiest place on earth... The Payson City Cemetery. Seriously though, who does that? Creepy if you ask me. But nonetheless, Coach is killing it with his walking habits and getting his cardio in, so good work Coach

Deb: Deb has steered clear of the Diet Coke altogether! Yes, finally, the Coke addiction has ceased! Not to mention, Deb gets the Nicole Mathewson Gold Star Award for Excellence in Medical recovery. After going through surgery this week. Deb, we all love you and think you are a Superstar... get better soon!

Mike Bristow: Has consistently ran every street in the tiny town of Payson. Seriously, this guy is probably outrunning Jarom Thurston he is so dedicated. I mean, pretty soon, we may see Mike doing this!:

Angie: Has continued to build a resistance to the baking skills of her eldest daughter Camryn

Mike and Ali: They have developed a habit of talking a lot of smack at the beginning of health competitions and then not submitting their points. Wait, did I make reference of their lack of pointage again? It's ok, just blame it on Costanza right guys? HMPH!

Nate and Amy: They deserve the Progresso Soup Consistency Award. These two are driven to win this competition as they have not missed one single point during the three weeks of competition. That's right ladies and germs, Nate and Amy have a perfect score of 150 points. (which may or may not be about 150 more than Mike M.... yup, another reference to his lack of points)

B: B is racking up the nicknames from yours truly. You could call her the Green Goddess (for her new found love of Spinach smoothies in the morning. Yes, she has made these smoothies a staple in her diet and it really shows! You don't want to know how, but trust me, give spinach a couple of hours to marinate in your colon and voila! It shows!  You could also call B "Slow and Steady". B continues to drop the pounds each week and has so far dropped 6.5 pounds! Great work B!

Nicole: Seriously, this girl is killing it on her workouts and her ability to ignore her kryptonite: CANDY. You see Nicole has a sweet tooth of sorts. However, she has tossed her love of nougat and marzipan aside and replaced it with a love of Kale and Fat Flush. (Yes another image you don't want to think about). She is also working out 4-5 times a week on toning up her muscular attributes :). Oh and I think I'll brag about the wife some more. She has been doing a ton of strength training with her sister at the gym... so her body fat % is definitely decreasing and her lean muscle is what? INCREASING! To top it off, she has done all of this without getting too trunky for Hawaii... well, sort of

Darwin: Well, let's just say that my habits are many. I've developed a habit of looking ever so handsome. Yes, it's true. The other day, as I was going about my daily regimen, I am pretty sure that I saw one abdominal poke out of my belly! Either that or it's a gremlin of some sort, but hey, an AB! This is huge for me! Remember, Fat Jeff? Skinny Jeff? Belly Jeff? Soon, y'all will be calling me Midsectional Jeff.

Anywho... enough with the banter about habits. We are doing a really good job! Keep it up and let's work even harder this week. Now, the moment you have been waiting for.

Proof of our healthy eating

Nic and I both have some delicious recipes to share with y'all for our photo proof this week. Stuffed Bell Peppers or Chicken Fajitas.
We'll post the recipe for Chicken Fajitas and the Peppers sometime this week:
Fajitas:

1.5 pounds to 2 pounds of chicken (just get frozen breasts, thaw them over night, and then slice them into fajita sized pieces. In the morning, marinate the strips in 1/4 cup of lime juice ( we like to do 1/2 cup) and 1/2 cup of soy sauce. Add two tbsp. of oil and 1 tbsp. of chili powder as well. You can change and adjust how much of the marinade you want to add.
Marinate for as long as you want ;) We did for about 8-10 hours while at work.

Heat a pan/skillet at high with oil in it. Throw the chicken in and brown it for a few minutes, while chicken is browning, throw 2 pre sliced bell peppers and one medium onion into the bag of marinade. Once chicken is browned, cook onions and peppers, and then add the chicken back in when the peppers are soft.
Cook till hot and ready (peppers and onions should be soft and fajita looking ;) )

Serve on wheat tortilla, with a little low fat cheese and salsa/avocado and you are loving life.
(This is also cleanse friendly, hardly any carbs... so during cleanse week, it's a champ of a meal)

Yummy Low Cal Recipe For When You Need Something Light But Are Sick of Salads

Chicken Tortilla Soup - only 130 calories per 1 cup serving!!!

20 ounces chicken breast - cooked - I use canned if I'm in a hurry, fresh if I'm not
1 can black beans
1 can kidney beans
1 cup salsa
1 jar canned tomatoes (4 cups)
3 stalks celery
1 lb. bag baby carrots
2 cups chicken broth or bouillon
1 Tbsp. lemon juice
fresh spinach

Pour all ingredients except spinach in pan. Bring to boil. Turn down and simmer till carrots and celery are soft. Right before serving, throw a few handfuls of spinach on top and stir. Enjoy!!! Yummy, yummy good!!

PS - I use low sodium options or fresh ingredients whenever possible.

Week 2, Week 2.. A Week of Cleansing, Bowel Movements and A Heaping Pile of WHO?

**WARNING: Read at your own discretion. This blog post may contain juvenile cleansing jokes, as well as a brief controversial use of emoticons**

Yup, that's right everyone! It's that time again!
Our weekly update. After last week's overwhelming response and positive feedback that has been coming in from Twitter, Facebook and the 70 year old somethings on NetZero accounts, this blog has quickly made its way into the top 100 blogs about Mormon families utilizing competitive tactics and swindling strategies to improve their body composition. Yes, everyone. We've cracked the Top 100 and are up to 130 page views in two weeks. Granted, 85% of those views come from myself, but hey, nobody needs to know that.

So week 2! Wow, don't let the "Play on Words" title throw you off. Amy, you know I had you going. Especially after your comment during the kickoff about sending photo proof of the Fat Flush (NOT APPROPRIATE!)
This past week everyone should have started on the cleanse for the month. We all should have been regulated and feeling loose all week long. What better way to show your love during Valentines week then by cleaning out your system for your significant other?
I know that Nicole and I chose to celebrate our love by frequenting the facilities on St. Valentine's Day.

Anyways, strangely enough, a lot of you sent me visual proof of your success with the cleanse. Some of you (Coach, Deb) had struggles at first at "sweeping the chimney", but I think Mike and I may have found the solution:

Coach tried to cleanse using a strict diet of Fudgecicles and Otter Pops; but, unfortunately, in a shocking scientific pheonmenon, he only cleansed out a small child!
Snowman Pants and all, Coach is making the pounds fall
Deb also was unsuccessful at first, as she couldn't get the cleanse to work the first few days; but, thanks to the Rocky Mountain Biscuit Waltz that Scout taught her, Mama Deb is was as regular as a Viking by week's end.
"Come on Grandma, you need to scrunch your face up like this and just let it ride!"

Mike resorted to drastic measures to helping Ali cleanse....

Scaring the *insert your favorite bleep here* %&*@ out of her! :) (p.s. I warned you not to read if you are  offended by cleansing jokes and controversial emoticons)

Now, then, as everyone was struggling to clean out their systems, Mike and I took matters into our own hands. We conducted numerous underwater tests in a local swimming hole and found the solution: Submerge your rump in water for 15 minutes, set it, and forget it!

Mike and I did, and now Deer Creek is full of new sea monsters:
As you can see by our faces, it may have been a bit of struggle, but our colons are now clean as a whistle.

After hearing how successful Mike and I were at cleansing by submerging our rumps in water, Amy tried out the method herself:
Based on the amount of bubbles in the water.... Amy's cleanse was a clear (well, sort of) success

Now, in all honesty, I hope the cleanse went well for you all. We'll get another round of the cleanse beverage next month to use. So start prepping now.

Mike B. was not able to cleanse with us this past week as he is on a strict diet of Haggis and Human Growth Hormone for his upcoming participation in the Westerland Highland Games. So we'll give him a pass on the Cleanse this time around.
After suffering a horrendous eye injury in last year's games, Mike is hoping his new found "Stunner Shades" will help him  avenge last year's Caber Toss Loss
Now then, with all the jokes and hullaballoo aside, let's get to our results and progress after Week 2!
As of tonight (which it's 12:30 a.m. on Thursday), our family as a whole has:

Lost 41 pounds of body fat (about 4 pounds per person)!

This is a great number everyone! Keep in mind, if you are feeling discouraged or like you are not progressing, that is completely wrong. You are progressing and doing a great job. It's all about making a lifestyle change and creating healthy habits. The numbers will come. Plus, you'd be surprised if you measured your waist, arms, legs etc. and saw the improvement. Not to mention, I guarantee that the body fat % on everyone has gone down since the intial weigh in.
(In fact, I'm so confident this is the case, that if it's not, I will gladly grant anyone free babysitting on a day of their choosing...
I promise to give your kids more attention than this guy.

B, Coach & Deb, Nicole, you get the shaft on this one. And no Mike, don't go and eat your weight in In N Out Burgers just to score a free night of babysitting.)
We had some great progress from peeps this week:
Nate the GR8 and last week's Weekly Winner dropped another 5 pounds this past week!
(That puts Nate's total pounds loss at 10 so far)
Mama Deb saw some huge progress by dropping another 4 pounds
(She has lost a total of 9 pounds altogether)
Coach, after a slight gain of 2 pounds the first week, dropped 4 pounds this week as well! Coach and Deb have something good working for them. Share the secrets y'all!
Angie dropped another pound this week and has gone down a total of 6 pounds!
I don't like to brag, but yours truly dropped a solid 4.5 pounds of body fat this week as well :)
Nicole is tearing it up with her workout regimen. She is hitting the gym 3-4 times per week and toning up those obliques. MMM I love me some Nicole obliques.
B, I would brag about you, but you don't submit your numbers.... still waiting :)
Everyone else was solid too :)
Now for the weekly winner.
This one is tough, we had some great progress and some top point scorers. But I feel this Weekly Award, which by the way is really going to tickle your tastebuds, is more than deserving.

I Love my Keen-Wah

So, Nicole introduced me to a new dish recently... so I decided to use it as as our (yes, both Nicole and I's ) visual proof of eating healthy and in compliance with the Cleanse Week. (which can be a challenge where simple carbs should be avoided).

She made this delectable dish... and spent only about an hour or less on it! Delicioso:
Turkey Quinoa Meatloaf... yup, pronounced (Ter-key Keen-wah Meet-loah-f)

I Just Had To Post

This photo is for my wonderful siblings, who did not realize that Cream of Wheat CAN be a healthy breakfast. For those of you who remember fondly this breakfast of our youth, when you remove the 1/2 cup of butter, 2 cups of brown sugar and the lumps, it is actually a tasty & nutritious breakfast on a snowy morning. I like to eat mine with some fresh blackberries and a teaspoon of fresh orange honey from Winco. Protein, whole grain & fruit in one happy, healthy bowl.

PS - The yellow around the edges is from the honey, not from the 1/2 cup of butter from our youth.

Hi Everyone. Here's my photo proof of healthy eating for Week #2.

I have to say though, where have all the photos gone?? I thought we'd be seeing a lot more photo proofs on this blog. After all, such an easy way to make up a point lost by say.....a bite of a yummy cookie, a whoops, I forgot I can't drink that diet coke, or a midnight cherry chocolate attack. Kudos to Mom for her exercise proof this week, Nic & Jeff for the smoothie post last week and Nate for his photos. The rest of you, SHOW ME THE MONEY. I want to see some proof of your labors, hard-work & suffering. 'Cause I know, most of you have a better Warrior 2 pose than I. Love ya all. Stay strong!!!

Week 1 Is In the Books!

Yes ladies and gentlemen, we have arrived at the one week point. Well, technically it's like the 10 day point... but that's ok right? Good, glad we agree.

This week should be appropriately named the Week of 5's! I'll get to that in a minute. But first, how did everyone do? The first week is the toughest as it requires a lot of habit changes and eating/daily routine adjustments. BUT, once we all get this thing down, eating and living healthily will become second hat for us all (yes I just used the reference of second hat... you're welcome B).

So anyways, this past week was the week of 5's! 5 because only 5 of y'all reported your numbers back without an invite. 5 because I'm pretty sure 5 is the total amount of points that the eldest Mathewson son scored all week...

Oh wait... technically Mike didn't score any points because he hasn't submitted them yet. So until he does, feel free to call him whatever you like. Creative nicknames like Big "O", Mr. Zilch, Senor Zero.. Come up with an even more creative name for Mike, and I'll give you an award next week. Ready go!

Oh it was also a week of 5's because we had four, yes four of our FIT Challengers lose a total of 5 pounds! Woohoo! That's like losing a premature newborn or a smallmouth bass! So kudos to y'all!

As a familia, we dropped a total of.... Drumroll please....
24 pounds!!!!!
(technically, we lost 26 pounds, but we also gained 2 pounds during the challenge, so I'm going with our net gain ;) )
That's just over 2 pounds per person! That's like losing nearly 3 1/2 non-premature newborns!

Good on ya' everyone!


 Some other highlights:
My smokin' hot wife, Nicole, has not had any type of candy during the Challenge! This is a huge accomplishment. Pigs are flying and Christmas Miracles are happening!
Yours truly, was able to drop nearly 3% body fat!
Deb officially did not do Cafe Rio night tonight! WOOHOO! Go Deb
Coach continues to search for a Cherry Chocolate replacement.

Finally, as was mentioned at the initial kickoff meeting, I will be handing out weekly awards, including a prize to the Weekly Challenge Champ.

Photo Proof of the Highlanders Efforts to get FIT!

Hey all,It's a little late, but here is Nicole and Darwin's proof of healthy eating this week. This is called the green monster smoothie. It's what we have for breakfast every morning and we're are announcing to y'all, that you need to get with it and try it out. Looks disgusting when you blend it together, but boy does it tickle your tonsils as it goes down!
Here's the recipe:
8-10 ounces of fruit juice
2-3 handfuls of leaf spinach (costco 2.5 pound bag is the way to go... only $4.00 or so and lasts forever)
2 leaves of kale (yummy eh?)
a cup or two of frozen fruit (Costco has a 2 1/2 pound bag of mangoes, pineapple, papaya, etc, for like $8 that lasts us about 2 weeks)
Optional: Vanilla protein, blueberries, skittles (just kidding, but that might be good)

Oh, and everyone should have their free noni products. You can start them whenever you want, but it should be enough to last for you for 30 days. Fell Off the Wagon

Challenging Day 2

I just wanted to let everyone know the challenge I had to deal with today...
Maple Glazed, Bacon Topped Doughnut
Yes! That just happened.... Someone brought 12 maple bacon delights to our office and filled the air with the delicious smell of the savory, sweet desert. Everyone was saying how good they were, but I resisted!!!!! I did not experience the "Homer Simpson" doughnut, but I will forever be satisfied with my decision to be fit!  GAME ON!!!!!

Whether it is cards, board games, debates, sucking M&M's, or arm wrestling; the Mathewsons do not like to lose to anyone over anything. I think all six of the kids inherited it from their parents. Think about it..., there's like gentic testing and DNA analysis out there that can determine this stuff. The power of modern science!

Anyways, everyone in this here family has wanted to improve their health and their lifestyle for the longest time. We all recognize the need for an intervention. It seems like our once chiseled frames and rock hard abs have since turned into borken dreams. BUT!, it's 2012... the world is going to end in like 10 months and we have a lot to do to look our best!

So we invented this challenge of epic proportions. Excercise will be excorcised, healthy food will be consumed, and porcelain may or may not be chipped from the gallons of water that will be consumed. Yes, the very core of Utah County will be shaken to its roots.
People will want to be you, children will want your action figure, and you will want to create your own clothing line similar to JNCO, FUBU, or B.U.M. Equipment.

Rumor even has it that the winner of the competition will be featured in the Utah Valley Magazine and on BYUTV's original program NOVA.

Needless to say your lives will never be the same. You will turn heads, you will make teenage girls cry, and most importatnly, YOU WILL give 110% in this competition. If you do not, be prepared to be mocked ridiculed and most importantly motivated and lifted up by the rest of your family.

This blog will highlight our progress. This blog will provide witty commentary. This blog will fill that void that you've had in your life. You're all administrators... meaning, you can all post on this blog whenever you want.
