Good for the Whole Family

Ahh, the power of a good example. Since Nate & I have started working out, it has become a family favorite activity to work out with us. The kids have really gotten into exercising with us, Adi has even written her own exercise program, which she follows strictly. The boys especially enjoy running the stairs. As you can see, this program has worked wonders for Gage's muscularness.

Eating Healthy Doesn't Have To Taste Bad!!

Hi all. Here is my breakfast recommendation for this week. This is a yummy ham & asparagus omelet with the family favorite green smoothie. Just take 4 egg whites, omeletize them, saute some onions, asparagus, garlic and lean ham together. Place in omelet, sprinkle a small amount of feta for flavor and fold omelet over. I also throw in a handful of spinach and dice up tomatoes for the top. Delicious!! and filling. Sometimes we have for dinner too.

Smoothies are good any part of the day!

I've been trying to follow the plan perfectly. So I was a little disappointed when i realized I missed one of my veggie servings Friday. This smoothie is a good way to get a serving in.

Get FIT and Start Hob Knobbin' with the Rich and the Famous

Now then, I knew you guys would make all sorts of connections with your hot new bods and bodaciously buff muscles... but not even I could have foreseen this!:

This also explains why Mike and Ali didn't submit their points yet again! Man, I'll tell ya, either they have a case of the Amnesias every Sunday, or they are planning a huge comeback in this challenge. Which is it? Stay tuned!

Anyways, another week has gone by and needless to say, dis family gittin' FIT y'all! To date, we have lost just under 58 pounds of body fat!
You don't even want to know how many premature newborns that equals! Great work! And I'm sure if we were to measure waists and body fat % (which I think we should do at the birthday parties for March, yes mine is on the 13th and yes I am in need of gifts and trinkets).

So yeah 58 pounds of body fat,Great work everyone! There is a ton of progress being made by everyone and we are well on our way to creating healthier lifestyle HABITS.

That's right Habits.They say that it takes 30 days to create a successful habit and only 2 days to break them. Well, we are coming right up on the 30 day mark and to honor such a milestone, I thought I would acknowledge some of the good habits that have been formed by the FIT Challenge Contestants

Coach: Has consistently walked mile after mile in the Not so happiest place on earth... The Payson City Cemetery. Seriously though, who does that? Creepy if you ask me. But nonetheless, Coach is killing it with his walking habits and getting his cardio in, so good work Coach

Deb: Deb has steered clear of the Diet Coke altogether! Yes, finally, the Coke addiction has ceased! Not to mention, Deb gets the Nicole Mathewson Gold Star Award for Excellence in Medical recovery. After going through surgery this week. Deb, we all love you and think you are a Superstar... get better soon!

Mike Bristow: Has consistently ran every street in the tiny town of Payson. Seriously, this guy is probably outrunning Jarom Thurston he is so dedicated. I mean, pretty soon, we may see Mike doing this!:

Angie: Has continued to build a resistance to the baking skills of her eldest daughter Camryn

Mike and Ali: They have developed a habit of talking a lot of smack at the beginning of health competitions and then not submitting their points. Wait, did I make reference of their lack of pointage again? It's ok, just blame it on Costanza right guys? HMPH!

Nate and Amy: They deserve the Progresso Soup Consistency Award. These two are driven to win this competition as they have not missed one single point during the three weeks of competition. That's right ladies and germs, Nate and Amy have a perfect score of 150 points. (which may or may not be about 150 more than Mike M.... yup, another reference to his lack of points)

B: B is racking up the nicknames from yours truly. You could call her the Green Goddess (for her new found love of Spinach smoothies in the morning. Yes, she has made these smoothies a staple in her diet and it really shows! You don't want to know how, but trust me, give spinach a couple of hours to marinate in your colon and voila! It shows!  You could also call B "Slow and Steady". B continues to drop the pounds each week and has so far dropped 6.5 pounds! Great work B!

Nicole: Seriously, this girl is killing it on her workouts and her ability to ignore her kryptonite: CANDY. You see Nicole has a sweet tooth of sorts. However, she has tossed her love of nougat and marzipan aside and replaced it with a love of Kale and Fat Flush. (Yes another image you don't want to think about). She is also working out 4-5 times a week on toning up her muscular attributes :). Oh and I think I'll brag about the wife some more. She has been doing a ton of strength training with her sister at the gym... so her body fat % is definitely decreasing and her lean muscle is what? INCREASING! To top it off, she has done all of this without getting too trunky for Hawaii... well, sort of

Darwin: Well, let's just say that my habits are many. I've developed a habit of looking ever so handsome. Yes, it's true. The other day, as I was going about my daily regimen, I am pretty sure that I saw one abdominal poke out of my belly! Either that or it's a gremlin of some sort, but hey, an AB! This is huge for me! Remember, Fat Jeff? Skinny Jeff? Belly Jeff? Soon, y'all will be calling me Midsectional Jeff.

Anywho... enough with the banter about habits. We are doing a really good job! Keep it up and let's work even harder this week. Now, the moment you have been waiting for.

Proof of our healthy eating

Nic and I both have some delicious recipes to share with y'all for our photo proof this week. Stuffed Bell Peppers or Chicken Fajitas.
We'll post the recipe for Chicken Fajitas and the Peppers sometime this week:
Fajitas:

1.5 pounds to 2 pounds of chicken (just get frozen breasts, thaw them over night, and then slice them into fajita sized pieces. In the morning, marinate the strips in 1/4 cup of lime juice ( we like to do 1/2 cup) and 1/2 cup of soy sauce. Add two tbsp. of oil and 1 tbsp. of chili powder as well. You can change and adjust how much of the marinade you want to add.
Marinate for as long as you want ;) We did for about 8-10 hours while at work.

Heat a pan/skillet at high with oil in it. Throw the chicken in and brown it for a few minutes, while chicken is browning, throw 2 pre sliced bell peppers and one medium onion into the bag of marinade. Once chicken is browned, cook onions and peppers, and then add the chicken back in when the peppers are soft.
Cook till hot and ready (peppers and onions should be soft and fajita looking ;) )

Serve on wheat tortilla, with a little low fat cheese and salsa/avocado and you are loving life.
(This is also cleanse friendly, hardly any carbs... so during cleanse week, it's a champ of a meal)

Yummy Low Cal Recipe For When You Need Something Light But Are Sick of Salads

Chicken Tortilla Soup - only 130 calories per 1 cup serving!!!

20 ounces chicken breast - cooked - I use canned if I'm in a hurry, fresh if I'm not
1 can black beans
1 can kidney beans
1 cup salsa
1 jar canned tomatoes (4 cups)
3 stalks celery
1 lb. bag baby carrots
2 cups chicken broth or bouillon
1 Tbsp. lemon juice
fresh spinach

Pour all ingredients except spinach in pan. Bring to boil. Turn down and simmer till carrots and celery are soft. Right before serving, throw a few handfuls of spinach on top and stir. Enjoy!!! Yummy, yummy good!!

PS - I use low sodium options or fresh ingredients whenever possible.
